I was thumbing through some geeklists at BGG and ran across the PnP in 5 minutes thread.  A few more games that I want to take time to try include Bypass and Tenet.  Bypass appears to be a territory game with dividing walls on hexes which looks interesting to me.  Tenet is a chess variant on a 5 x 5 board.  Both appear to be quick to put together and I'd like to give a spin this week.

I'm still working my way up to the Utopia Engine.
